A North American Private School Summer Academy, 50 Guests — Nine Group Dinners Across Six Cities on Honshu

A private school in North America engaged us under formal contract for its summer academy — 45 students and 5 faculty, 50 in all — running approximately three weeks across June and July 2026. The itinerary spans six cities on Honshu: Tokyo, Matsumoto, Kanazawa, Kyoto, Hiroshima and Osaka.

Our scope was the full arrangement of nine group dinners over the course of that itinerary — from selecting each venue to running the evening itself, built in each of the six cities around what belongs to that place.

For students with dietary restrictions — allergy, faith, or constitution — we built individual alternatives, meal by meal, all nine times. Everyone at the same table, at the same hour, sharing the same occasion. It is the most labour-intensive part of travelling in numbers, and the part we are least willing to compromise.

In Kanazawa we also prepared an optional programme for those who wished to join: a sushi-making workshop.
